What You'll Need
To make this delicious meal you'll need the following ingredients
2 oz (340 g) extra firm tofu drained and pressed
1/2 medium onion
3 cups (90 g) fresh spinach
1 cup (125 g) white mushroom
2 Tbsp chopped fresh coriander
2 cloves garlic
2 tsp maple syrup
1/2 lime 1 large tomato
1 Tbsp vegan feta cheese
1/2 avocado
Spices
1 Tbsp nutritional yeast
3/4 tsp ground turmeric
1/4 tsp salt
1/2 tsp onion powder
1/4 tsp ground cumin
Instructions
Chop the onion, garlic, mushroom, tomato, and coriander, and place into a bowl.
Take the pressed tofu and crumble it into a preheated, lightly greased frying pan.
Cook the tofu on medium heat and add in the ground spices.
Add the vegetables and maple syrup to the pan and sauté for 5-8 minutes until the vegetables have softened and the spinach has wilted.
Divide between 2 plates and serve with a slice of tomato and 1/4 avocado per serving.
Squeeze some lime juice over the tofu and top with chopped coriander and vegan feta cheese.
Tips
Season your tomato and avocado with salt, pepper and garlic.
