What You'll Need
To make this delicious meal you'll need the following ingredients
1 1/2 cups (150 g) dried orzo pasta for gluten-free sub rice or rice pasta
1/2 small sweet onion
10 chopped sun-dried tomatoes (from a jar of oil-packed sun-dried tomatoes)
30 chopped, pitted green olives
7 halves Walnuts - Shelled Halves
1/4cup (12 g) chopped parsley
1/4 cup (50 g) Feta cheese
1 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
Kosher salt
Fresh ground black pepper
Instructions
Cook the pasta al dente (firm to the bite) in a pot of boiling water, with a tsp of salt, for 10 mins or per the packaging instructions.
Drain the orzo, transfer it to a large bowl, and immediately toss the hot pasta with the oil, balsamic vinegar, sun-dried tomatoes, and olives (Set pasta aside to cool before proceeding to step 3, or cover and store in the fridge for up to 24 hours, and bring to room temperature before proceeding).
Once the pasta comes to room temperature, toss it with the rest of the ingredients: onion, parsley, feta, and walnuts.
Season with salt and pepper to taste.
Mix well and serve at room temperature.
Tips
This pasta can be kept in the fridge for several days, but it is at its best the day you make it.
To add in more protein, replace the orzo pasta with lentil pasta.
To reduce carbohydrates, omit the pasta and substitute for lettuce and cauliflower rice.
