What You'll Need
To make this delicious treat you'll need the following ingredients
1 medium banana, mashed
1 medium egg, beaten
1/4 cup (60 ml) of unsweetened plant milk
1/4 cup (70 g) dairy-free yogurt
1 Tbsp honey
2 cups (160 g) gluten-free rolled oats
2 scoops (50 g) protein powder (vanilla flavored if possible)
1 tsp cinnamon
1 tsp baking powder
1 cup (150 g) fresh blueberries
Instructions
Preheat the oven to 400°F (200 °C).
Spray a 6-count muffin pan with nonstick spray or use cupcake liners.
In a large bowl, combine the mashed banana, egg, milk, greek yogurt, and honey, and mix until well combined.
Add the oats, protein powder, cinnamon, and baking powder, and mix well.
Now add the blueberries to the bowl and fold them (be gentle) in until everything is well combined.
Spoon the batter into the prepared muffin liners and bake for around 25 min.
Allow the muffins to cool for 5 minutes in the muffin pan, then transfer them to a wire rack to continue cooling.
