What You'll Need

To make this delicious treat you'll need the following ingredients

Apple filling

  • 5 medium-cored apples, peeled and cut into 1-inch (2.5 cm) pieces

  • 1 Tbsp apple cider vinegar

  • 2 Tbsp water

  • 1 tsp cinnamon

  • 1/4 tsp ground ginger

  • Pinch of nutmeg

  • Pinch of sea salt

Crumble

  • 3/4 cup (70 g) old-fashioned gluten-free oats

  • 1/4 cup (28 g) walnuts, roughly chopped

  • 1 tsp ground cinnamon

  • 2 Tbsp maple syrup

  • 1 1/2 Tbsp coconut oil

  • Pinch of sea salt

  • 1 tsp water, if needed

Instructions

  1. Preheat the oven to 350°F ( 175°C), and grease an 8x8-inch ( 20 x 20 cm) baking dish.

  2. Make the apple filling by combining the apples, apple cider vinegar, and water in a saucepan, cover and simmer over very low heat, stirring occasionally for about 15 minutes.

  3. Uncover, stir, and add the cinnamon, ginger, nutmeg, and salt and stir again (the apples should be tender, and the juices should be thick).

  4. In a food processor or blender on pulse, combine together the oats, walnuts, cinnamon, maple syrup, and coconut oil and pulse until crumbly (add 1 tsp of water if needed).

  5. Transfer the apple filling to the prepared dish, and gently press down with a spatula then sprinkle evenly with the oatmeal topping.

  6. Bake until the topping is golden brown and juices are bubbling along the edges (for about 20 to 25 minutes).

  7. Allow cooling for at least 15 minutes before serving and enjoy!

Tips

  • If you do not have a food processor you can also make the crumble in a bowl, using your hands.
